We recently had the pleasure of speaking with John Carr, founder of Adirondack Pub & Brewery in Lake George, NY. John shared how his dedication to homebrewing led to the creation of the popular brewpub. During our conversation, he reflected on his love for the area and commitment to the community.
How Did You Learn About Lake George?
Growing up in Vermont, I was always surrounded by natural beauty, but it was my girlfriend who first introduced me to Lake George.
As I spent more time here, I quickly realized that the area lacked a local brewery. That discovery sparked my passion for creating something that could both support the community and offer delicious craft beer.
From Homebrewing to Brewery Ownership
I got my start by interning under a seasoned brewmaster from Oregon, where I learned the ins and outs of the industry. It was during that time I first witnessed the early stages of the hazy brews craze, which later influenced my own brewing innovations.
I remember experimenting with traditional recipes and different techniques, and what started as a hobby with friends and family turned into something much bigger.
After 10 years of homebrewing, I opened the Adirondack Pub and Brewery in 1999, making it a year-round destination for great beer and all-American comfort food.
How Adirondack Pub & Brewery Stays Ahead of the Curve
As the craft beer landscape has evolved, so has my approach to brewing. My IPAs change with each season, and the brewery regularly puts out new "Waves" of modern, juicy, East Coast IPAs that are crowd favorites.
Owning a business in Lake George comes with its challenges, but I’m committed to pushing boundaries and adapting to the market. From navigating strict compliance regulations to exploring new opportunities for winter business, I’ve found that resilience and creativity are key.
What Do You Enjoy Doing in Lake George?
For me, a perfect day in Lake George is a mix of relaxation and adventure. I enjoy taking a stroll along Beach Road with my dogs, hiking up Pinnacle, or catching a concert at Shepard Park.
There are so many local gems, and I love sharing them with visitors. I always encourage people to walk around and see everything the town has to offer.
Community Collaboration & Supporting Local Businesses
Community involvement is crucial to the success of my business. I’m deeply connected to the community and committed to enhancing the Lake George experience.
I’m also a big supporter of businesses that stay open year-round—they’re the backbone of the region. Places like The Lagoon and the Lake George Beach Club keep the local spirit alive all year long and support the economy.
Their willingness to take risks for the community’s well-being is what being part of this region is all about.
Looking Ahead to the Future of Lake George
Regarding the $10M Downtown Revitalization Initiative grant, I hope Lake George takes inspiration from places like Cohoes or Warren Street in Glens Falls. Past grants have really helped these communities to evolve and grow.
I believe that working closely with business owners to implement improvements in Lake George could lead to a large return on investment and have a lasting impact.
